Course Overview

A course designed for anyone working in a catering, manufacturing or retail setting where food is prepared, cooked and handled.

This will enable you to prove to an employer that you have an understanding of food hygiene, and you appreciate the need for food safety.

Please state at time of booking whether you require the Catering or Manufacturing option. If in any doubt, please discuss your needs with a member of the short courses team.

The course syllabus will include:

Food safety hazards
Temperature control
Refrigeration, chilling and cold holding
Cooking, hot holding and reheating
Food handling
Principles of safe food storage
Food premises and equipment

Entry Requirements


Students will watch instructional videos, participate in class exercises and then answer a multiple choice test paper at the end of the course. (Occasional weekend and evening classes will be available please contact short courses or see dates below.)

Students are required to bring a notepad and pen
